Yummy Scrummy Carrot Cake the II

This is a hybrid of 2 different recipes with an added twist from me. I tried to make it a little healthier, I upped the carrot, used light Olive Oil and used a little less unrefined sugar and it was delish!

  • 175g light muscovado sugar (Unrefined sugar, I sometimes use half sugar half, splenda to make it even lighter but you need to add more moisture.)
  • 175ml Light olive oil
  • 3 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 190g grated carrots
  • 100g raisins
  • Orange rind (a scant tablespoon)
  • 175g self-raising flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp grated nutmeg (freshly grated will give you the best flavour)

Apart from the grating this, is really simple and quick.

Preheat the oven to 180C/Gas 4/fan 160C. Grease your tin(s)

Add your sugar, oil and eggs to a mixing bowl, stir once. If you’re using sweetener don’t add it till you add the dry ingredients instead add a tablespoon more oil.

Then add your vanilla, grated carrot, raisins and orange rind. Mix lightly, less is more here.

Add your flour, bicarb, baking powder and spices to another bowl and mix. Then sift into your mixture.

Mix until just combined, it will be quite runny, and turn into 2  greased 6 inch loaf tins or one 6 inch square tin. This recipe will also make 12 muffin sized cupcakes.

Bake for 30 -45 mins or until golden and springy to the touch. Shorter times for the cupcakes longer for 1 tin…

I topped this with some cream cheese frosting I already had.  I’ve only just realised I’ve never shared any cream cheese frosting recipes, oops. It’s a very simple 100g butter, 200g  full fat cream cheese blended till smooth then 600g icing sugar beat in. Only I added a little grenadine syrup to make it pink!

Also I got a very exciting birthday present which I will share on my actual birthday tomorrow when I can open it, yay!
