Sweet Saturday: Cream Cheese Frosting

Hope you all are having a lovely Saturday, I feel like I earned this one. There’s no rest for the wicked though because I have been super busy still today cleaning but also baking.  I made my favourite carrot cake recipe and while I was at it decided to try out a new soft cream cheese frosting recipe.

It was good! So I decided to share it with you guys, you’re welcome!

Ultimate Soft Serve Cream Cheese Frosting


  • 250ml/2 cups Double (Heavy) Cream
  • 100g/Half cup Unsalted Butter
  • 250g/2 cups Cream Cheese (full fat)
  • 120g/Just under 1 cup Icing Sugar (sifted)
  • 1/4 Teaspoon Vanilla Bean Paste
  • Salt to taste


  1. Make sure your cream is super cold and whip to stiff peaks. Cold cream will whip easier. Place to one side, in a cool place.
  2. Cube room temperature butter and add to a mixer or blender, mix until smoth. Add cream cheese and blend again till just smooth, add sifted sugar and vanilla then blend well. Add a little salt to taste, I add a tiny pinch.
  3. Add half your whipped cream and blend. Then stir in the remaining cream.

Makes enough to cover 12 cupcakes genorously or 24 cupcakes as I did above.
